Grilled Beets

5 small beets (size of new potatoes, adjust amount for other sizes)
large tart apple, such as Granny Smith
white part of 3 scallions
salt
sugar
nutmeg
butter
ice cube

-- Wash the beets and cut off the tops. Dice into bite-size pieces.
-- Slice the apple, cutting into somewhat larger dices.
-- Slice the white part of the scallion very thinly.
-- Mix beets, apple, and onion in a large bowl.
-- Place mixture in center of a piece of aluminum foil. You will be creating
a baking 'packet' with the foil.
-- Add a tablespoon butter, cut into several pieces. Add a dash of salt, dash of
sugar, and half teaspoon of nutmeg. Put one ice cube in center.
-- Fold the packet lengthwise and then close the ends. Repeat with another
layer so the packet is double-wrapped.
-- Put packet on a preheated grill and cook for about 30 minutes. Flip several
times during grilling. This works best on a medium-heat grill.

This recipe serves 2, but can easily be expanded to make more packets. It's also better to make packets that can easily be flipped during grilling instead of making one giant packet.
